Sugar Free Coconut Basil Mint Ice Cream

Prep time: 1 – 2 hours
Cook time: 5 min
Serves: 4 – 6
Notes: This is a very light and understated flavor but it’s perfect for people who want to limit their sugar intake. If you want to replace the stevia for maple syrup please feel free! Also, depending on your taste add more or less basil and mint. I love the mint in this recipe because it makes this ice cream so refreshing!
Ingredients:

  • 2 cans of organic coconut milk (not light, also not the the beverage)
  • 2 – 3 teaspoons of organic coconut butter
  • 5- 10 drops of organic stevia (start with a small amount of stevia and work your way up to the desired level of sweetness.)
  • 2 tablespoons of fresh chopped mint (or more if you love mint)
  • 1 tablespoon of fresh chopped basil
  • 1 whole vanilla pod or 1 1/2 teaspoons of vanilla extract
  • 1/4  – 1/2 teaspoon cardamom
  • 1 healthy pinch of sea salt
Directions:
  1. You’ll first need two large rimmed baking sheets lined with parchment paper for freezing the coconut milk (you can freeze the night in advance if you want to save a lot of time).
  2. Pour each can of well shaken coconut milk onto separate parchment lined baking sheets and store flat in the freezer for 1 – 2 hours until hard.
  3. Finely chop basil and mint and set aside for later.
  4. If using a whole vanilla pod, slice down the middle and gently scrape out the vanilla into a small dish and set aside for later.
  5. Once the coconut is frozen remove from the freezer and break it up into small pieces.
  6. Put the pieces in the food processor and blend until fully smooth, adding more pieces as you go. Depending on the size of your food processor you might need to split the batch in half.
  7. Add all of your other ingredients and blend until completely smooth and creamy. (You’ll want it to melt just slightly for that real ice cream texture)
  8. Serve immediately with or without garnish and enjoy!
