One of the things I hear from my clients most is how to make a fast, easy, and healthy breakfast.

I think we approach healthy eating with the assumption that it’s expensive, difficult and tasteless. But in reality that could not be further from the truth.

In my Beginners Healthy Breakfast Cooking Club, I teach my students how to take control of breakfast so that it’s simple, quick, and tasty without sacrificing nutrition and health!

Count chemicals, not calories

Healthy eating should be unbelievably delicious, very easy, and completely satisfying. If it isn’t those things, then you’re doing it wrong.

That’s why this breakfast is not only satisfying, it is incredibly savory, and absolutely 100% healthy for you.

The point with healthy eating is to not eat less, but to eat better. Don’t count calories, count chemicals. With this breakfast you may be tempted to think, “gosh that’s a lot of fat!”

Fat’s bad rap

Healthy fats are actually a central part of maintaining your ideal weight, a healthy brain, and heart.

Fat is what makes us feel satiated…full.

It’s a slow burning fuel and we need it. So the very last thing I want anyone to do is count calories or even think about counting calories when it comes to healthy eating. It’s simply not necessary.

Despite what people think, a calorie is not a calorie. 500 calories of coconut oil or avocado is not the same as 500 calories of processed and refined white flour, sugar, or soda.

Would you rather have 500 calories of calcium-leaching, teeth-rotting soda? Or 500 calories of energy-boosting, fat-busting coconut oil?

We have to start training ourselves to think in terms of nutritiousness rather then caloric intake.  Food is not the enemy.

So as we dive into making this together I want to point out that although avocado and coconut oil are very high in fat, its not the kind of fat that’s going to raise your bad cholesterol or put on any extra weight.

I repeat you will not get fat from eating these fats.

bread alone

The basis of our  breakfast begins with swapping out regular bread for Ezekiel sprouted bread.

There’s absolutely no flour in this bread. It’s made from sprouted grains which are alive. What that means for you is that you’re going to get much more nutrition than you would from a whole wheat flour.

Plus, sprouts are rich in enzymes and probiotics which make your digestion much easier.

The sprouted grains are also extremely rich in protein and fiber. And this specific combination of grains creates a complete protein. So if you’re looking to increase your lean muscle mass, build strong hair, skin, nails, and bones then you’re going to need complete protein.

This is one of the only vegetarian sources of complete protein and it showcases the wisdom of food.

Coconut oil

Coconut oil is a fat that burns fat.

It is rich in medium chain triglycerides (MCT’s). This type of fat is incredible at speeding up metabolism and protecting against brain damage including Alzheimer’s. Coconut oil is antiviral and antibacterial.  So if you’re looking to fight off Candida, or bad yeast, this oil will help you!

Avocado

Avocados are one of the most amazing foods in the world!

Again, though they’re high in fat, this good fat (oleic acid) helps your body feel full and stay slender. It’s rich in chlorophyll, minerals, 18 essential amino acids (the building blocks of protein), soluble fiber, and vitamins B, C, and E.

Bonus tip! To ripen, store in a brown paper bag with a ripe banana near a warm place. Voila! Perfectly ripe avocado in less than 24 hours.

Nutritional yeast

Nutritional yeast is extremely high in B vitamins, which will give you lots of energy, and help you grow healthy hair, skin, and nails.

This beneficial yeast is also very high in protein making it a fantastic food for vegetarians. Plus, this yeast can be added to nearly any savory dish, giving it a “cheesy” flavor. I use it for almost everything.

Raw sauerkraut

Raw sauerkraut, unlike canned, is hands-down one of the most healthy foods you can possibly eat.

It’s fermented and contains an enormous amount of living bacteria and enzymes which are essential to all aspects of good health.

This raw sauerkraut will supercharger digestion, giving you tons of energy and help you to eliminate on a regular basis with ease. This will also help to support healthy immune system and healthy mood. I recommend consuming a fermented vegetable everyday!
